How They’re Grown

Eros Oysters begin as tiny, 2mm oysters, known as spat that grow in the farm’s nursery in Robinhood Cove. There, twice a day, the Atlantic Ocean rushes into Robinhood Cove at high tide, and refreshes the baby oysters with an abundance of nutrients drawn from the shallow waters of the marsh at the cove’s bottom.

Once they reach 1 inch, the tiny oysters are moved to cages that float atop the water’s surface. They remain in these cages, nourished by the sea, and bobbing in the tides, over the next 2 years. The Eros Team regularly tends to the oysters to ensure they are growing health. 

The mature crop of Eros Oysters live closer to the Robinhood Cove marsh, giving them their unique, refreshing sweet finish. The oysters grow quickly in the summer months, and are over-wintered in the depths of Robinhood Cove in colder months to prevent them from freezing.

After three years growing in the nutrient-rich Robinhood Cove, the Eros team harvests these beauties for market in warmer months.

Eros is a true salt water farm, with three generations working together to bring these oysters to market. Eros Oysters are grown in Robinhood Cove. The Cove was named by the original English settlers after the local Indian chief (more arrows) who sold them the island and cove for some pumpkins. The settlers nicknamed him Robinhood, perhaps because they couldn’t remember or pronounce his Abenaki name, Mowhotiwormet.

Nor'Easter Oyster Co is a woman-owned aquaculture business, and Southern Maine’s first shellfish processing facility. Our mission is to create new revenue opportunities for local Maine sea farmers by purchasing excess oysters, that would otherwise go unused, and transforming them into premium seafood products.
